Researchers Get to the Root of Cassava's Cyanide-Producing Abilities view detail comment email this

Describes how "the roots and leaves of poorly processed cassava plants contain a substance that, when eaten, can trigger the production of cyanide." Eating improperly processed cassava can lead to cyanide poisoning in the form of a goiter, "a debilitating, irreversible paralytic disorder called Konzo," and even death. The article also discusses how scientists are trying to genetically engineer the plant to eliminate this problem. Includes links to related information. From the Ohio State University.
