This site describes the process by which bread is leavened with sourdough starter rather than store-bought yeast. The site explains that to create sourdough starter the baker "captures wild yeast [fungi] that floats in the air to create starter from scratch." It also tells you how to make your own traditional starter, and provides a basic recipe for sourdough bread. From How Stuff Works.

Caterer and baking teacher Stephanie Jaworski carefully notes sources when she has adapted recipes, and includes a bibliography.
